Potato Pancakes w/ Smoked Salmon, Broccoli & Chipotle Dressing

Ingredients:
Vegetable oil cooking spray
5 eggs
1 Leeks, sliced
1 cup cheddar cheese, shredded
3 medium yellow flesh potatoes, peeled and grated
6 medium sweet potatoes, peeled and grated
1 tsp black pepper
½ tsp salt
1 tbsp crushed peppers
1 tsp cumin
2 chipotle peppers in adobo sauce
1 cup Greek Yogurt
340g sweet broccoli tender stems
2 tbsp olive oil
4 cloves garlic, crushed
5 individual packages of smoked salmon
Directions:
1. Preheat oven to 400F & spray vegetable oil on a baking sheet.
2. In a large bowl, mix together eggs, leeks, cheddar cheese, yellow flesh and sweet potatoes, black pepper, salt, crushed peppers, cumin.
3. Mix until all ingredients are well combined.
4. Scoop ¾ cup mixture and form a pancake, place on baking sheet (approximately 15 pancakes). Place in oven and bake for 45 minutes.
5. In the meantime, in a food processor mix together 1 cup Greek Yogurt, 2 chipotle peppers & 1 tbsp adobo sauce. Mix until a smooth texture forms.
6. Lastly, on medium-high heat in a non-stick frying pan add olive oil, sweet broccoli tender stems & garlic. Sauté stirring occasionally for 10 minutes.
7. To assemble, place 3 pancakes with smoked salmon & drizzle with chipotle dressing. Serve with broccoli.
